Ingredients

  • 1/2 purple cabbage
  • 1 gala apple
  • 1 tbsp pine nuts or walnuts
  • 1 tbsp pomegranate seeds
  • Mint leaves

Steps

  1. Slice the purple cabbage using a mandolin and sprinkle with salt for crunchiness.
  2. Julienne the gala apple with a mandolin.
  3. Add mint leaves and sprinkle with nuts.
  4. For the dressing, mix the juice of 1 lemon, 3 tbsp olive oil, 1/2 tsp mustard, and salt and pepper to taste.
