Scallops with Silk Tofu and Herbs

Ingredients

  • 6 scallops
  • 1 tbsp silk tofu
  • Herbs (mint, tarragon, parsley, dill)
  • 1/2 lemon
  • 1 tbsp olive oil
  • Salt
  • Pepper

Steps

  1. Lightly squeeze the scallops with a paper towel to absorb excess water.
  2. Fry the scallops for 1 minute on each side.
  3. For the sauce, blend the silk tofu, herbs, and lemon until smooth.
  4. Serve the scallops with the herb sauce.
