Oats Coconut Milk Pancakes

Ingredients
- 1 cup rolled oats (blended until powdered)
- 165 ml coconut milk
- 150 ml water
- 2 tbsp olive oil (for preventing sticking)
- 1 ripe banana
- 1 tbsp baking powder
- 1/2 tbsp baking soda
- 1 tsp cinnamon powder
- Salt to taste
Steps
- In a bowl, combine powdered oats, baking powder, baking soda, cinnamon powder, coconut milk, olive oil, and water.
- Mash the banana and add it to the mixture, then mix until it becomes a batter.
- In a non-stick pan, brush with oil and scoop the batter onto the pan.
- Wait until the top appears silky, then flip the pancake.
- Cook on low heat to ensure thorough cooking and prevent burning.
- Serve with yogurt, honey, and berries.
