Oats Coconut Milk Pancakes

Ingredients

  • 1 cup rolled oats (blended until powdered)
  • 165 ml coconut milk
  • 150 ml water
  • 2 tbsp olive oil (for preventing sticking)
  • 1 ripe banana
  • 1 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1 tsp cinnamon powder
  • Salt to taste

Steps

  1. In a bowl, combine powdered oats, baking powder, baking soda, cinnamon powder, coconut milk, olive oil, and water.
  2. Mash the banana and add it to the mixture, then mix until it becomes a batter.
  3. In a non-stick pan, brush with oil and scoop the batter onto the pan.
  4. Wait until the top appears silky, then flip the pancake.
  5. Cook on low heat to ensure thorough cooking and prevent burning.
  6. Serve with yogurt, honey, and berries.
