Baked Cauliflower in Chickpea Sauce

Ingredients

  • 1 cauliflower
  • 1/2 can chickpeas
  • 2 long red peppers, roasted
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 1/2 lemon, juiced
  • Salt, to taste
  • Pepper, to taste

Steps

  1. Cut cauliflower into florets.
  2. In a bowl, mix cauliflower florets with onion powder, garlic powder, oregano, smoked paprika, olive oil, salt, and pepper.
  3. Bake the cauliflower at 180°C (350°F) for 30 minutes.
  4. In a blender, combine chickpeas and roasted long red peppers.
  5. Add lemon juice and blend until smooth. Season with salt and pepper to taste.
  6. Serve the baked cauliflower on top of the chickpea sauce.
