Baked Cauliflower in Chickpea Sauce

Ingredients
- 1 cauliflower
- 1/2 can chickpeas
- 2 long red peppers, roasted
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 tbsp olive oil
- 1/2 lemon, juiced
- Salt, to taste
- Pepper, to taste
Steps
- Cut cauliflower into florets.
- In a bowl, mix cauliflower florets with onion powder, garlic powder, oregano, smoked paprika, olive oil, salt, and pepper.
- Bake the cauliflower at 180°C (350°F) for 30 minutes.
- In a blender, combine chickpeas and roasted long red peppers.
- Add lemon juice and blend until smooth. Season with salt and pepper to taste.
- Serve the baked cauliflower on top of the chickpea sauce.
