One Pot Chicken Rice

Ingredients

  • 1 whole chicken
  • 500 g chicken stock
  • 2 cups rice
  • 1 tsp turmeric
  • 1 thumb ginger
  • 1/4 medium onion
  • 500 g bok choy
  • 2 stalks spring onion
  • 1/2 tsp salt
  • 6 tbsp oil

Steps

  1. Clean the chicken, remove the wings, and cut it in half.
  2. Rinse the rice until the water runs clear to remove starch.
  3. Fry the onion in oil until fragrant, then add ginger and fry until aromatic.
  4. Add turmeric and stir until well combined.
  5. Add the rice and mix well until incorporated.
  6. Pour in the chicken stock and bring to a boil.
  7. Once boiling, reduce the water and place the two halves of the chicken on top.
  8. Cook on low heat for 15 minutes.
  9. Finely chop the ginger and spring onion.
  10. Heat oil until smoky and pour over the ginger and spring onion.
  11. In a pan, sauté garlic, then add bok choy and season with salt and pepper.
