One Pot Chicken Rice

Ingredients
- 1 whole chicken
- 500 g chicken stock
- 2 cups rice
- 1 tsp turmeric
- 1 thumb ginger
- 1/4 medium onion
- 500 g bok choy
- 2 stalks spring onion
- 1/2 tsp salt
- 6 tbsp oil
Steps
- Clean the chicken, remove the wings, and cut it in half.
- Rinse the rice until the water runs clear to remove starch.
- Fry the onion in oil until fragrant, then add ginger and fry until aromatic.
- Add turmeric and stir until well combined.
- Add the rice and mix well until incorporated.
- Pour in the chicken stock and bring to a boil.
- Once boiling, reduce the water and place the two halves of the chicken on top.
- Cook on low heat for 15 minutes.
- Finely chop the ginger and spring onion.
- Heat oil until smoky and pour over the ginger and spring onion.
- In a pan, sauté garlic, then add bok choy and season with salt and pepper.
