Zucchini Carrot Spinach Roll

Ingredients
- 1 zucchini
- 1/2 carrot
- Handful of spinach leaves
- 1 egg
- 100 grams melted cheese
- Salt to taste
- Pepper to taste
Steps
- Grate the zucchini and carrot, sprinkle with salt, and let sit to soften. Squeeze out excess moisture.
- Fry the spinach for 1 minute.
- Mix the grated zucchini, carrot, and spinach together.
- Add the egg and melted cheese to the mixture and combine well.
- Line a baking tray with baking paper and brush with oil to prevent sticking.
- Spread the mixture evenly in the tray and bake at 180 degrees Celsius for 30 minutes or until golden brown on top.
- Roll the baked mixture in ham.
- Serve with guacamole or sour cream.
