Zucchini Carrot Spinach Roll

Ingredients

  • 1 zucchini
  • 1/2 carrot
  • Handful of spinach leaves
  • 1 egg
  • 100 grams melted cheese
  • Salt to taste
  • Pepper to taste

Steps

  1. Grate the zucchini and carrot, sprinkle with salt, and let sit to soften. Squeeze out excess moisture.
  2. Fry the spinach for 1 minute.
  3. Mix the grated zucchini, carrot, and spinach together.
  4. Add the egg and melted cheese to the mixture and combine well.
  5. Line a baking tray with baking paper and brush with oil to prevent sticking.
  6. Spread the mixture evenly in the tray and bake at 180 degrees Celsius for 30 minutes or until golden brown on top.
  7. Roll the baked mixture in ham.
  8. Serve with guacamole or sour cream.
