Ingredients

  • 1 medium zucchini
  • 1 medium carrot
  • 2 tbsp flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Steps

  1. Grate the zucchini and carrot, sprinkle with salt to draw out moisture, then squeeze out excess water.
  2. In a bowl, mix the grated vegetables with flour, baking powder, and baking soda.
  3. Add 1 tbsp of olive oil to prevent sticking in the pan.
  4. Fry on low heat until golden brown.
