Ingredients
- 1 medium zucchini
- 1 medium carrot
- 2 tbsp flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp olive oil
- Salt to taste
- Pepper to taste
Steps
- Grate the zucchini and carrot, sprinkle with salt to draw out moisture, then squeeze out excess water.
- In a bowl, mix the grated vegetables with flour, baking powder, and baking soda.
- Add 1 tbsp of olive oil to prevent sticking in the pan.
- Fry on low heat until golden brown.
