Herb Salad Dressing

Ingredients
- 1 handful of mint, tarragon, dill, basil, and parsley
- 1/4 lemon with peel
- extra lemon juice to taste
- apple cider vinegar
- salt
- pepper
- Japanese spicy sauce or any spicy alternative
- a bit of water
- 100g silken tofu
- lettuce or romaine leaves
- mesclun mix
- toasted pistachios
Steps
- Blitz all ingredients in a Thermomix or food processor until smooth.
- Serve on top of lettuce, romaine leaves, or mesclun mix.
- Top with crushed toasted pistachios.
