Herb Salad Dressing

Ingredients

  • 1 handful of mint, tarragon, dill, basil, and parsley
  • 1/4 lemon with peel
  • extra lemon juice to taste
  • apple cider vinegar
  • salt
  • pepper
  • Japanese spicy sauce or any spicy alternative
  • a bit of water
  • 100g silken tofu
  • lettuce or romaine leaves
  • mesclun mix
  • toasted pistachios

Steps

  1. Blitz all ingredients in a Thermomix or food processor until smooth.
  2. Serve on top of lettuce, romaine leaves, or mesclun mix.
  3. Top with crushed toasted pistachios.

Can be done with any available herbs. Tofu can be substituted for avocado or edmame.
