Vegetarian Cream Soup

Ingredients

  • 1 cauliflower
  • 1 potato
  • 1/2 medium onion
  • 65 ml coconut cream
  • 1/2 tsp turmeric powder
  • 1 tbsp olive oil
  • Croutons

Steps

  1. Fry the onion in olive oil until golden.
  2. Add the potato and fry until it turns a silky color.
  3. Add the cauliflower and fry for about 3 minutes.
  4. Pour in about 2 cups of water and bring to a boil.
  5. Add the turmeric powder and cook until the cauliflower and potato are tender.
  6. Transfer the mixture to a blender and blend until creamy.
  7. Serve with croutons and optionally drizzle with balsamic vinegar.
