Vegetarian Cream Soup

Ingredients
- 1 cauliflower
- 1 potato
- 1/2 medium onion
- 65 ml coconut cream
- 1/2 tsp turmeric powder
- 1 tbsp olive oil
- Croutons
Steps
- Fry the onion in olive oil until golden.
- Add the potato and fry until it turns a silky color.
- Add the cauliflower and fry for about 3 minutes.
- Pour in about 2 cups of water and bring to a boil.
- Add the turmeric powder and cook until the cauliflower and potato are tender.
- Transfer the mixture to a blender and blend until creamy.
- Serve with croutons and optionally drizzle with balsamic vinegar.
